Ingredients
4 medium-large sweet potatoes
3 tbsp avocado oil , feel free to use olive oil or another high-heat neutral tasting oil of your choice
1 tsp garlic powder
1/2 tsp paprika , for added flavor - omit if preferred
Salt and pepper , to taste
1 avocado
½ lime
1 tsp fresh coriander finely chopped
Salt and pepper
¼ cup cashews
¼ cup unsweetened plant-based milk
3 tbsp nutritional yeast
Pinch smoked paprika
¼ tsp garlic powder
Instructions
If your air fryer requires preheating, preheat it to 380°F.
Cut Potatoes: Slice the sweet potatoes into even ¼ inch strips, or use a fry cutter if you have one.
Season: In a large bowl, toss the potatoes with oil and season them with salt, black pepper and garlic powder.
Place in Air Fryer Basket: Working in batches (depending on the size of your air fryer), place the fries in the air fryer basket in a single layer, making sure they are not crowded or overlapping.Cook: Air fry at 380°F for 10-13 minutes (or longer), flipping halfway through, until the fries are golden brown or until they've reached your desired crispness.
Garnish & Serve: Transfer the fries to a serving platter and sprinkle them with coarse salt and chopped fresh parsley. Serve them with your desired dipping sauce(s) and enjoy!
Avocado Dip: Mash the avocado in a bowl with the back of a fork until smooth with the juice of ½ lime. Add the coriander and then season with salt and pepper.Aioli Dip: Place the ingredients for the cashew cheese dip in a food processor and blend until smooth. If you don’t have a high speed blender soak them in hot water for 30 mins then drain.
