Stovetop Shepard's Pie

Ingredients

1 lb lean ground beef

1 pkg (16oz) frozen mixed veggies

1/4 c water

1 Tbsp dried onions, minced

1 pkg (2.75oz) dried mashed potatoes

1 1/2 c water

1/4 tsp salt

2 Tbsp butter

2/3 c skim milk

1 can tomato soup, condensed

1 tsp worchestershire sauce

1/4 tsp dried thyme

1/2 c sharp cheddar cheese

Instructions

Step 1

Brown ground beef in a large sauté pan over medium-high heat. Drain; return ground beef to pan. Stir in frozen vegetables, 1/4 cup water and onion. Reduce heat to medium, cover and simmer, stirring occasionally, 5 minutes or until vegetables are thawed.

Step 2

Meanwhile, prepare mashed potatoes according to package directions, using 1-1/2 cups water, salt, butter and milk. Cover and set aside.

Step 3

Stir soup, Worcestershire sauce and thyme into meat and vegetables. Spread prepared mashed potatoes on top. Sprinkle with cheese. Reduce heat to low, cover and heat through, about 5 minutes.
