Taco soup

The best soup to have on a cold fall or snowy, winter day by the fireplace.

Ingredients

4 qt chicken stock or water

3 lb chicken breasts, boneless and skinless, chopped

2 lb mixed vegetables, frozen

3 can black beans, seasoned, canned

1 can tomatoes, canned diced, with green chiles

1 pkg taco seasoning mix, spicy or mild

colby jack cheese

tortilla chips

Instructions

Step 1

Mix first six ingredients and let simmer for an hour

Step 2

Top with cheese and serve with tortilla chips.
