Chess Pie is super easy to make with a gooey sweet custard filling in a flaky pie crust and a perfectly golden caramelized layer on top.

Ingredients
1 (9-inch) unbaked pie crust
1/2 cup salted butter melted
1 1/2 cups granulated sugar
4 large eggs
3 tablespoons cornmeal
1 tablespoon all-purpose flour
1/4 cup milk
2 tablespoons lemon juice
1 teaspoon vanilla extract
1/2 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C).
Roll out the pie crust into a 9-inch pie dish. Place the dish in the freezer to chill while preparing the filling.
In a large mixing bowl, combine 1/2 cup melted butter and 1 1/2 cups granulated sugar. Whisk thoroughly until smooth then add in 4 large eggs and whisk until smooth.
Mix in 3 tablespoons cornmeal and 1 tablespoon all-purpose flour until evenly combined.
Stir in 1/4 cup milk, 2 tablespoons lemon juice, 1 teaspoon vanilla extract, and 1/2 teaspoon salt until the mixture is smooth.
Remove the pie dish from the freezer. Carefully pour the filling into the prepared crust.
Place the pie on the center oven rack and bake for 45-50 minutes, or until the edges are golden and the center is set.
