Ingredients
½ tablespoon olive oil
2 boneless, skinless chicken breasts, sliced
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 tablespoon minced garlic
4 oz asparagus (100 g)
½ lemon, zested, plus more for garnish
½ lemon, juiced
3 tablespoons soy sauce
cooked rice, for serving
Instructions
Season the chicken with the salt and pepper. Heat the olive oil in a large pan over medium-high heat. Add the chicken and stir-fry until no longer pink on the outside, about 4 minutes. Add the garlic and continue cooking until the chicken is cooked through, about 4 minutes more.
Add the asparagus, lemon zest, and lemon juice and toss to combine. Cook until the asparagus is tender, about 2 minutes, then stir in the soy sauce.
Serve the stir-fry over rice with more lemon zest on top.
